22 Jun Roasted Cauliflower with Garlic Herb Butter
It is such a treat to have cauliflower in our shares this week. One of my favorite ways to serve cauliflower is by roasting it. This recipe showcases that method but then uses a garlic herb butter to boost the flavor of this amazing vegetable.
Roasted Cauliflower with Garlic Herb Butter
Ingredients:
1 head cauliflower
2-3 Tbsp olive oil
1 tsp sea salt
½ tsp black pepper
4 Tbsp salted butter
2 garlic scapes, finely chopped (should be about 2 Tbsp)
2 tsp fresh herbs of choice, finely chopped*
- Cut cauliflower into 1-inch chunks and place in a medium bowl.
- In a small bowl, mix oil with salt and pepper. Drizzle on the cauliflower and toss to coat.
- Spread onto a baking sheet in a single layer.
- Roast at 425°F for 25 minutes. Mix about halfway through cooking.
- While cauliflower is roasting, make garlic herb butter. Melt butter in small saucepan.
- Add garlic scapes and fresh herbs. Simmer on low for 5 minutes. Turn off and wait for cauliflower to be done roasting.
- Remove cauliflower from oven and place in bowl. Pour on melted garlic herb butter. Toss to coat and serve immediately.
- Enjoy!
*So many fresh herbs would work in this recipe. You can use just one or mix two or three. I used lemon thyme and it paired really well with the cauliflower.
