A light, refreshing potato salad pairs well with any protein.  This salad requires roasting the potatoes instead of the typical boiling and then is dressed with a vinaigrette and fresh herbs.  It can be served warm or cold.

Fresh Herb Potato Salad

Ingredients:
2 lbs new potatoes
¼ cup olive oil, plus 1 Tbsp (divided)
2 Tbsp white wine vinegar
1 tsp Dijon mustard
½ tsp lemon juice
½ tsp sea salt
1/8 tsp black pepper
¼ tsp onion powder
¼ tsp garlic powder
3-4 Tbsp fresh herbs of your choice, finely chopped (chives, parsley, thyme, basil, dill, marjoram, etc)

  • Wash and cut the potatoes into ½- ¾ inch pieces (if using fingerling potatoes, slice larger potatoes lengthwise than cut again into your ½-inch pieces). Place the cut potatoes into a bowl and toss with 1 Tbsp of olive oil.
  • Preheat oven to 400° Move the potatoes to a parchment lined baking sheet.

  • Bake for 40 minutes. Stir halfway through baking time.
  • In a small bowl, mix ¼ cup olive oil, vinegar, mustard, lemon juice, and spices. Whisk well to combine and set aside.
  • Chop the fresh herbs and set aside.

  • Once the potatoes are done roasting, remove from oven and transfer to a bowl. Add the vinaigrette and chopped fresh herbs.  Mix well.
  • Serve warm or refrigerate and enjoy chilled.

Beets are new to our shares this week, so I thought it would be fun to showcase these nutrient rich root veggies in a simple salad.  Roasting them only enhances their sweet earthy flavor. This salad can be made ahead of time and is best when given time to chill and marinate.  It can be served alone, as a side, or on top of greens.

Roasted Beet Salad

Ingredients:
1 bunch beets, bulbs only
1 green garlic, white part only
1 spring onion, bulb only
2 Tbsp olive oil or avocado oil
1 Tbsp balsamic vinegar
1 tsp lemon juice
½ tsp lemon zest
½-1 tsp honey or maple syrup
½ tsp sea salt
Pinch black pepper
1 tsp finely chopped fresh chives

Directions:

  • Clean beet bulbs. Wrap each bulb in foil and roast in 400°F oven for 30-45 minutes.

  • Time will vary depending on the size of the beets.  They should be fork tender when done.  Larger beet bulbs may need up to 60 minutes of roasting time.
  • Remove from oven and open foil. Allow to cool for 20-30 minutes.
  • Peel (they should rub right off) and cut into cubes. Place in a medium bowl.
  • Thinly slice green garlic and spring onion and mix in with beets.

  • Combine oil, vinegar, lemon juice, lemon zest, honey/maple syrup, salt, and pepper in a small bowl or mason jar. Mix well.
  • Pour dressing over beet mixture and mix until beets are well coated.
  • Garnish with chives.
  • Store in an airtight container in refrigerator.
  • Serve as a side or over a bed of fresh salad greens.

**Feel free to also add a crumbled cheese like goat or feta (or try the Birchrun Hills Farm Blue Cheese from this week’s cheese share) and some toasted nuts like walnuts or almonds.

New to the CSA shares this week is kohlrabi, a unique vegetable developed by crossing a cabbage and a turnip.  Back when my family began as members of Blooming Glen Farm CSA, we had never heard of kohlrabi.  It’s now one of my personal favorites- delicious, crisp and refreshing.  This week’s recipe showcases raw kohlrabi in a simple, yet healthy way.  This would make a great side dish or could be served over salad greens (we enjoyed it with a side of egg salad for a quick dinner on one of our busy nights on the go).

Kohlrabi and Apple Salad

Ingredients:
2 medium kohlrabi bulbs
1 large apple (*I used our favorite, honeycrisp, but you can use any crisp variety)
2 Tbsp chopped scallions
2 Tbsp olive or avocado oil
Juice of 1 lemon, about 2 Tbsp
2 tsp maple syrup
½ tsp sea salt
¼ tsp black pepper
½ tsp lemon zest
Chive blossoms (optional)

  • Clean the kohlrabi. Cut off the bottom.  You do not need to peel this young spring variety.  The skin is tender and edible.  Julienne both bulbs and place in large bowl.
  • Core apple and julienne. Add to large bowl with kohlrabi.

  • Add scallions to the bowl with kohlrabi and apple pieces. Mix to combine.
  • In small bowl, combine oil, lemon juice, maple syrup, salt, pepper, and lemon zest. Mix well.
  • Pour dressing over kohlrabi, apple, and scallion mixture. Toss to coat all pieces.
  • Allow to marinate for at least 15 minutes.
  • Optional: garnish with chive blossoms.
  • Enjoy!

**You can also make this into a slaw.  Simply shred the kohlrabi bulbs and apple instead of julienning.
